The Monte dei Cocci Primitivo Limited Edition Winding is an exclusive interpretation of Tenute Girolamo, the result of an accurate late hand collection, followed by a long process of drying and aging to obtain an extraordinary wine.
Vinification:
After the late collection, which takes place in the last week of September and exclusively by hand, the bunches undergo further widening in the cellar for about 4 weeks. Subsequently, they are gently pressed and undergo a maceration and fermentation of 10 days in stainless steel tanks. The process is completed with a 6 -month aging in French oak barrique, which gives complexity and aromatic depth.

TASTING NOTES
Colour: Bright, deep red with purple hues.
Bouquet: Rich, complex with hints of candied fruits, sun-dried fruits, jam and sweet spicy notes.
Taste: Full-body, warm and slightly sweet.
Food pairings: Wine for meditation or to pair with cookies or almond cakes.
Also indicated for aged cheeses and grilled meat.
Best served at: 16°-18° C.
