Cava Bianca wine comes from the wine-growing areas of the Itria Valley, at an altitude of 400–450 meters, thanks to the cultivation and harvest of Bianco d’Alessano, Fiano, and Chardonnay grapes.
The distinctive feature of this Apulian IGT wine is its velvety flavor and spicy aroma, the result of aging in French oak barriques for approximately 8 months.

The distinctive feature of this Apulian IGT wine is its velvety flavor and spicy aroma, the result of aging in French oak barriques for approximately 8 months.
After aging, the bottled IGT wine is stored in the dark in the Caverna della Fonte di Castellana Grotte for about 3 months, at a temperature of 15°C and with a humidity level slightly over 90%.
Thanks to this technique, Cava Bianca has a longer aging potential.
The fermentation period lasts 10–15 days. Part of the fermentation process takes place in temperature-controlled steel tanks, while the final phase is completed in barriques.
Cava Bianca pairs perfectly with fish dishes, white meats, and semi-mature cheeses.
To enhance the characteristics of this fine wine, it is recommended to serve it at a temperature between 12°C and 14°C.
